MY BIRTHDAY CAKE SHOULD ONLY BE TWO THINGS: classy and fabulous!

And so I decided to bake another fondant cake and this time, it's for myself. For our birthday! I realized that every girl has the right age she deserve and so with the cake. I go for Chanel cake cause I am a die hard lover of Chanel. and I've always wanted to bake a Chanel cake so here it is, not the best one but atleast I tried my best and I can honestly say that this cake iz Le' bomb!


I was actually of thinking of making this little cake too pinkish but I forgot to colored my fondant, too late when I realized that I actually wanted pink so I just painted it after. hahaha

My favorite part.. Covering the cake with fondant! :)
I also did some heart shaped Safari chocolate cake! :)

I just put some Betty Crocker chocolate frosting to make it more chocolaty in the center.
I love this cake! and I have finally discovered how to make my fondant less sweeter. 
I guess, it's true practice makes perfect! :))

Anyhoo, nothing really happened during my birthday cause I literally spent half of my day in school trying to get my grades and then went back to house at around 5-ish and eat with my family and some friends who went over the house.
Just the typical Filipino food and I love love love this Pancit malabon! so I asked my mom to buy this for our birthday. I am addicted to it! This is probably the only malabon that I like.. and surprisingly the best malabon ever! well, I also like the Malabon in Greenhills though. But its like whatever. I love this one. :)

I think the best gift I have ever received on my birthday was when I got this surprise call from my boyfriend. Although I told him in my letters that he should call me on my birthday cause I made him this little scrap book wherein I wrote him random letters inside that he should only read every month.. and I told him no peeking but right after he checked in to the hotel he told me he already read the letter for December which is very stubborn and honest of him. but whatever, atleast he made an extra effort to call me earlier than I actually thought. He actually called me last Sunday before my birthday and greeted me in advance. He called me like 9x that day and just made me laugh the entire time. He's the sweetest! and he's basically the highlight of my year. He's one of the few best things that ever happened to me, and I can't thank God enough for having him. He's the only person that I can really be myself with, I mean, I can literally be me when Im around him. He makes me feel like I'm very much at home and that I can just practically laugh my ass off with him, be goofy around him and just eat till my heart contents without him judging me.

And I think that's what love is all about, when you're inlove with someone who can make you be the most "you" that you can possibly be, when you don't even love them for their looks, or their clothes, or for their fancy car, but because they know exactly the melody to your heart, the music to your soul and can literally dance with it. Like there's this certain music that the two of you could only hear. and I think it's LOVE, or beyond it.. I think it's love at it's finest perfection. It's magical.

I don't even know how he could manage to make me feel loved eventhough he's nowhere near, but he was really that great to make me feel like I'm not alone. That he's still there, still inlove. That there's this weird invisible thread that brings us more closer to each other. It's like the more I miss him, the more he would make an extra effort to make-up with the times that he couldn't be here. He's an amazing boyfriend! and I couldn't ask for more. He's like the brother and the bestfriend I never had. He's my soulmate. There, I finally said it. and Eventhough at times he could really be such a huge pain in the ass, well,. he's MY pain in the ass, and I love him! :)

Tinkerbell cake! :)

Its summertime! and that means, I am officially broke! :))
But nonetheless, I always enjoy summer cause that means, more time for me to bake! yay.

So just this week I baked a cake. And this time, I didn't use a fondant. Just a royal icing.


 Its a very moist chocolate cake with yema and nuts filling! I did the Yema all by myself. :)
 and as you can see it's really fudgy! :p

I also used the excess batter to bake some cute cupcakes too! :)
They're too adorable right? so colorful! I love pastel colors. :)

 I love baking and I'm glad I have more time now to bake since its already summer and yknow I need to do something that can make me busy (somehow) so I won't have to spend my day thinking about my boyfriend. Which speaking of, he hasn't called me yet or even texted me since last Friday. I can't help but feel worried about him cause I just heard over the news today that there has been another hijacking news somewhere by Somalia Pirates. And it's not like he's working in a Luxurious Ship that has an Escort or whatnot. He's working as a Chief cook in a Cargo ship (carrying designer bags, perfume and stuff) and he's the only Filipino there. But I know God loves him too much, and he's gunna takecare of him.

But knowing him, he was just probably too busy and still adjusting his life out there. He's such a strong man and very hard working, infact you can't even make him sit in a chair for even 5mins without doing anything. He always have to move around. That's one thing I noticed about him. And I just love him more for that. :) I'm so proud of his success, thinking he's only 22  and yet he's done so many things, received so many awards in cooking. Featured in Lifestyle, etc. and still has a lot of potential. I am indeed a lucky girlfriend!

Anyhoo, he's gunna be away for a year.... so that means I need to have a lot (x 999999999) of patience if I want this to work. I trust our love too much and our pinky swears everynight that were gunna pull through this. lol

Oh welps. I will definitely miss him more and more everyday but my Life has to move forward though. and I probably need to get a summer job or atleast enroll myself in a summer workshop like maybe dance this time. I've always wanted to try Pole Dancing and I think I have to it this summer. Wish me luck! x

Gayuma ni Maria :)

Ever heard of this famous one of a kind restaurant? (Just along Sikatuna Village)

It projects a casual but romantic ambiance where you can hang out with friends and loved ones. A more of an  "aphrodisiac" restaurant kind of concept/theme. The food was okay especially the dessert with a very reasonable price. :)

His, the famous. "Chinoy in Seventh Heaven (P240)"
 My super favorite! I am not even kidding.
This is the best I've ever tasted and its called "Beats sex anyday Chocolate Cake"
Red velvet Cake. I'm not much of a fan of this one but it was fine, I like the chocolate better. :)

 At the second floor, an adjacent Japanese room with banig and pillow seats theme. That has a small fashion closet-type of store at the left side of the room.
Interesting Painting outside the restaurant. :)

Overall, the concept is very chic but a lot of improvement must be done, for a better dining experience. But nonetheless, I love it here! x

Life lately.

I've been quite busy and been trying to live my life and less blogging as much as possible. So far, so good. Got no regrets and truly just enjoying life as it is.

Lately, I've been really inspired and happy. I won't say anything about it just to avoid any drama or to jeopardize whatever is making me happy right now. I just feel like sharing it to the world might just ruin things.

I realize that I needed to make a change. And yes just for a change I want that one special thing about my life to be completely private and just enjoy whatever it is. All I know is I'm happy. I know I'm not lost anymore. Little by little I am becoming whole. And it's time for me to give it a shot. I'm not saying I can finally be in it, but I'm taking things slow and I am making sure that I am wiser this time and much stronger, so yeah. :)

JANUARY 28 - A sweet lunch out in Tagaytay.

I love it here. The food was the bomb! and this mudslide is to die for I suggest you go visit here and try this Buon Giorno restaurant. He doesn't really like Italian but I am damn craving for pasta so whatever. I'm the boss. Yup, cause the last time I checked, I was the one wearing the pants in this relationship whole thing. lol (pun intended)
Here are some of the resto in this place. I don't know why " Platito" isn't included. but here are some of the photos. I love the artsy fartsy effect. :)
It's also a nice place to dine in for sure, I would definitely try this resto. But he said that The fire lake grill is the best compared to others. But I'm not really much of a steak person so maybe next time if I plan on being chubby forever. lol

So if you're planning for a good long drive and good food, just go visit Tagaytay and try the foodies out here!

I lost my phone (Blackberry bold 9780) just recently. And I kinda felt bad about it. But nonetheless, I'm excited for my iphone 4s, soon. I had a good run with my BB and so it's time for me to try iphone. :)

Fresh Lumpia :)

So I woke up one morning craving for Fresh Lumpia.. I have no idea why I'm craving but it felt like I was going insane for fresh lumpia. This is btw, one of my favorite food. And so I asked my mom to buy all the ingredients for me and so yep.. here it is. :)



I swear, this is the closest taste from Max's fresh lumpia. (I'm crazy about them btw)

The recipe:
Filling
2 cups sweet potato, cubed
2 tbsp fish sauce (patis)
1 lb cabbage, shredded
1 ½ cup carrots, julienned
½ cup water
½ cup peanuts, crushed
6 pieces Lettuce leaves
½ lb pork, thinly sliced
1 pack extra firm tofu, sliced in strips
1 cup shrimp, shelled and deveined
2 cups string beans (baguio beans), chopped
1 medium sized onions, chopped
½ cup cilantro, chopped
3 tbsp garlic, minced
1 pork cube

Wrapper
1 cup all-purpose flour
2 pieces raw eggs
2 tbsp cooking oil
½ tsp salt
1½ cups milk

Sauce
1 tbsp soy sauce
½ cup brown sugar
2 cups water
½ pork cube
1 tbsp garlic, minced
2 tbsp corn starch (diluted in 4 tbsp water)

and ofcourse,

Since it's Chinese New Year I also made Tikoy lumpia for dessert - just to complete the lumpia combo. LOL
 I just soaked the tikoy first in beaten eggs and then rolled on lumpia wrapper.

and just added my Sour cream frenchies :)

So pls don't ask me why I gained too much weight lately. Cooking is my favorite and Food is my first love.

My Girly cupcakes! :)

Baking is an art. and for the love of it. I always make sure I bake every weekends. :)


So here I made my very first home made fondant out of Marshmallow. (as shown in my twitter ILOVETIN) Its very easy to make but also very sticky and messy, so make sure to follow all the rules in making your own fondant.




I just used my cookie cutter star, heart and bear and just added some details.

The next thing I will do is my first ever zebra print cake! :)

Baking on a Sunday morning... :)

Didn't have anything to do since it's Sunday, So I decided to bake first thing in the morning.





It's "Better than sex chocolate cupcake." I have a very sweet tooth so I'm crazy about cupcakes and shizz.. and I'm very much into baking, cooking these days so whatever. Here it is.



The recipe is very simple:

Ingredients
½ cup Unsalted Butter, at room temperature
¾ cup Granulated Sugar
¼ cup Brown Sugar
1 Egg
½ cup Cocoa Powder
1 cup All Purpose Flour
¼ tsp Salt
1 tsp Vanilla Extract
½ tsp Instant Espresso Powder
1/2 tsp Baking Powder
½ tsp Baking Soda
3/4 cup Buttermilk

Process,

1) Preheat your oven to 350 degrees, line a 12 piece cupcake tin with liners and set aside.

2) In a small bowl, combine the flour, cocoa powder, baking powder, baking soda and salt, set aside.

3) In a large bowl, cream together the butter and both sugars, add the egg and vanilla and whisk until smooth.

4) Add the dry ingredients and mix just until they are almost all incorporated. Add the buttermilk and mix everything quickly so you don’t over mix.

5) Using an ice cream scoop, fill your muffin tin and bake them for about 18 to 20 minutes or until a toothpick comes out clean when inserted in the center of a cupcake.

6) Let them cool completely before frosting them.

REMINDERS: Do not over mix it, and put a pudding mix to make it moisty.



The FROSTING:

I decided to make an Almond buttercream frosting for my cuppies. and all you need is an Almond clear extract for the almond flavoring, some confectioners, milk and butter. I suggest if you want your frosting to be white just use a shortening or avoid over powering the butter. :)
