Cupcake Poppers! :)

I baked these colorful amazing cupcake poppers according to the Betty Crocker's Recipe! Its fun and super yummy.. More like a soft macarons. Try it! :p



Cupcakes
1 box Betty Crocker® SuperMoist® white cake mix
Water, vegetable oil and egg whites called for on cake mix box
1/4 teaspoon each Betty Crocker® gel food colors (neon pink, neon purple, neon orange, neon green, classic blue)

Frosting
1 1/2 cups marshmallow creme
3/4 cup butter, softened
1 1/4 cups powdered sugar

Betty Crocker® gel food colors (neon pink, neon purple, neon orange, neon green, classic blue)


Procedures:


1. Heat oven to 350°F (for all pans). Spray 60 mini muffin cups. Make cake batter as directed on box. Divide batter among 5 small bowls, about 3/4 cup each. Make 5 different colors of batter by adding 1/4 teaspoon food color to each bowl; blend well.

2. Fill each muffin cup with 1 level measuring tablespoon batter, making 12 cupcakes of each color.

3. Bake 11 to 14 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely, about 10 minutes.

4. In large bowl, beat marshmallow creme and butter with electric mixer on medium speed until blended. Beat in powdered sugar until fluffy. Divide frosting among 5 small bowls, about 1/3 cup each. Using the same 5 food colors, lightly tint frosting in each bowl to match cupcake colors.

5. Assemble each popper using 2 mini cupcakes. Cut tops off each cupcake horizontally (save bottoms for another use). Spread or pipe about 1 tablespoon frosting on cut side of 1 cupcake top. Form a sandwich by placing cut side of second cupcake top on frosting; press lightly. Repeat with remaining cupcake tops. Store loosely covered.

You can also use buttercream for the frosting. :)

Tinkerbell cake! :)

Its summertime! and that means, I am officially broke! :))
But nonetheless, I always enjoy summer cause that means, more time for me to bake! yay.

So just this week I baked a cake. And this time, I didn't use a fondant. Just a royal icing.


 Its a very moist chocolate cake with yema and nuts filling! I did the Yema all by myself. :)
 and as you can see it's really fudgy! :p

I also used the excess batter to bake some cute cupcakes too! :)
They're too adorable right? so colorful! I love pastel colors. :)

 I love baking and I'm glad I have more time now to bake since its already summer and yknow I need to do something that can make me busy (somehow) so I won't have to spend my day thinking about my boyfriend. Which speaking of, he hasn't called me yet or even texted me since last Friday. I can't help but feel worried about him cause I just heard over the news today that there has been another hijacking news somewhere by Somalia Pirates. And it's not like he's working in a Luxurious Ship that has an Escort or whatnot. He's working as a Chief cook in a Cargo ship (carrying designer bags, perfume and stuff) and he's the only Filipino there. But I know God loves him too much, and he's gunna takecare of him.

But knowing him, he was just probably too busy and still adjusting his life out there. He's such a strong man and very hard working, infact you can't even make him sit in a chair for even 5mins without doing anything. He always have to move around. That's one thing I noticed about him. And I just love him more for that. :) I'm so proud of his success, thinking he's only 22  and yet he's done so many things, received so many awards in cooking. Featured in Lifestyle, etc. and still has a lot of potential. I am indeed a lucky girlfriend!

Anyhoo, he's gunna be away for a year.... so that means I need to have a lot (x 999999999) of patience if I want this to work. I trust our love too much and our pinky swears everynight that were gunna pull through this. lol

Oh welps. I will definitely miss him more and more everyday but my Life has to move forward though. and I probably need to get a summer job or atleast enroll myself in a summer workshop like maybe dance this time. I've always wanted to try Pole Dancing and I think I have to it this summer. Wish me luck! x

My Girly cupcakes! :)

Baking is an art. and for the love of it. I always make sure I bake every weekends. :)


So here I made my very first home made fondant out of Marshmallow. (as shown in my twitter ILOVETIN) Its very easy to make but also very sticky and messy, so make sure to follow all the rules in making your own fondant.




I just used my cookie cutter star, heart and bear and just added some details.

The next thing I will do is my first ever zebra print cake! :)

The only thing funny about making pretty cupcakes/cakes is,
 its too pretty to be eaten. lol

Baking on a Sunday morning... :)

Didn't have anything to do since it's Sunday, So I decided to bake first thing in the morning.





It's "Better than sex chocolate cupcake." I have a very sweet tooth so I'm crazy about cupcakes and shizz.. and I'm very much into baking, cooking these days so whatever. Here it is.



The recipe is very simple:

Ingredients
½ cup Unsalted Butter, at room temperature
¾ cup Granulated Sugar
¼ cup Brown Sugar
1 Egg
½ cup Cocoa Powder
1 cup All Purpose Flour
¼ tsp Salt
1 tsp Vanilla Extract
½ tsp Instant Espresso Powder
1/2 tsp Baking Powder
½ tsp Baking Soda
3/4 cup Buttermilk

Process,

1) Preheat your oven to 350 degrees, line a 12 piece cupcake tin with liners and set aside.

2) In a small bowl, combine the flour, cocoa powder, baking powder, baking soda and salt, set aside.

3) In a large bowl, cream together the butter and both sugars, add the egg and vanilla and whisk until smooth.

4) Add the dry ingredients and mix just until they are almost all incorporated. Add the buttermilk and mix everything quickly so you don’t over mix.

5) Using an ice cream scoop, fill your muffin tin and bake them for about 18 to 20 minutes or until a toothpick comes out clean when inserted in the center of a cupcake.

6) Let them cool completely before frosting them.

REMINDERS: Do not over mix it, and put a pudding mix to make it moisty.



The FROSTING:

I decided to make an Almond buttercream frosting for my cuppies. and all you need is an Almond clear extract for the almond flavoring, some confectioners, milk and butter. I suggest if you want your frosting to be white just use a shortening or avoid over powering the butter. :)
