Eggs Benedict with Hollandaise Sauce

I've been hella busy.. mostly, lazy. HAHA so please excuse my lack of post. Anyways, I'll be sharing this easy french (?) sandwich recipe called Eggs Benedict. I love the Chelsea's eggs benedict until they have taken it out of the menu. sad!

So here, since I've been craving for Eggs Benedict, I have decided to create my own. :)

REMEMBER: This recipe is too fattening so make sure to only devoured atleast once a month or very rare.


You just basically need bacon, ham and poached egg,.
Grilled the bacon together with ham..

and then poach an egg.. since I really don't know how to poach an egg, I just did this trick. haha

and more importantly, you need a really good English Muffin. I got mine from the French Baker. 
I love French Baker, I think they have the yummiest breads ever! 

For the english muffin, I just put them on our purple oven toaster with pink lights. hehe

Recipe
ham
bacon
english muffin (split and toasted)
poached egg

Hollandaise Sauce (oh/lah~/dez)
3 egg yolks
about 7-10 tbsp of melted butter
1 pinch of salt
pepper (optional)
1tbsp of fresh lemon juice

The making of the sauce.
  1. Melt the butter in a small pan or in the microwave. Remove immediately.
  2. In a blender, blend the egg yolks, pepper, and salt until smooth. Add half of the hot butter slowly.
  3. Then Blend in the lemon juice and the remaining butter.
Place the English muffins on the serving plates. Top with 1 ham and about 2 slices of bacon and 1 poached egg. Then drizzle with the hollandaise sauce, and serve. :)

Some uses heavy cream to make it creamier and they also add cayenne pepper but I haven't tried it.. if you have please lemme know.

Cupcake Poppers! :)

I baked these colorful amazing cupcake poppers according to the Betty Crocker's Recipe! Its fun and super yummy.. More like a soft macarons. Try it! :p



Cupcakes
1 box Betty Crocker® SuperMoist® white cake mix
Water, vegetable oil and egg whites called for on cake mix box
1/4 teaspoon each Betty Crocker® gel food colors (neon pink, neon purple, neon orange, neon green, classic blue)

Frosting
1 1/2 cups marshmallow creme
3/4 cup butter, softened
1 1/4 cups powdered sugar

Betty Crocker® gel food colors (neon pink, neon purple, neon orange, neon green, classic blue)


Procedures:


1. Heat oven to 350°F (for all pans). Spray 60 mini muffin cups. Make cake batter as directed on box. Divide batter among 5 small bowls, about 3/4 cup each. Make 5 different colors of batter by adding 1/4 teaspoon food color to each bowl; blend well.

2. Fill each muffin cup with 1 level measuring tablespoon batter, making 12 cupcakes of each color.

3. Bake 11 to 14 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely, about 10 minutes.

4. In large bowl, beat marshmallow creme and butter with electric mixer on medium speed until blended. Beat in powdered sugar until fluffy. Divide frosting among 5 small bowls, about 1/3 cup each. Using the same 5 food colors, lightly tint frosting in each bowl to match cupcake colors.

5. Assemble each popper using 2 mini cupcakes. Cut tops off each cupcake horizontally (save bottoms for another use). Spread or pipe about 1 tablespoon frosting on cut side of 1 cupcake top. Form a sandwich by placing cut side of second cupcake top on frosting; press lightly. Repeat with remaining cupcake tops. Store loosely covered.

P.S
You can also use buttercream for the frosting. :)

Banapple with my sistars! :)

I know.. we look grouchy and shiz haggard, but don't judge okay? we were supposed to have our swimming try-outs in Ateneo early this afternoon when it got canceled. (Boo you, edric!) But since we were just around katipunan we decided to eat at Banapple instead! One of my favorite place to eat.. :)

Jess and Pauline's. Ceasar salad and the caramel crumble cake. I think? lol

I love Banapple and I think they serve one of the most yummiest dishes and cakes in town! I actually think I have tried most of their cakes but my favorite and the best I've ever tasted so far was the fudgymudgy and Banoffee pie.

Anyhoo... 

Jessica was mortified the whole time because she was just wearing her pambahay clothes. But nonetheless, she managed to pull off the look with extraordinary confidence as ever! haha

and to highlight my day.. Jessica gave me these Ghirardelli chocolates. Wee! she's the sweetest. x

Anyways, we were all working for this Advocacy project for kids. Were still planning and jotting down all the details, ideas and possibilities for it. Actually it was my idea but I love my friends for supporting me all the time with my Charity projects/ideas especially with this one. We really do hope it's gunna work and will start as soon as possible. I've been praying for this and I really do hope that God will provide me with so many amazing people to support me and help me with this advocacy. God Bless us all! :)

"You taste like the 4th of July!"


Here I did my very own recipe of my 4th of July juice…

First you need to put some ice(not too much), then add the strawberry juice, and then you need to put ice again and this time make sure to fill the glass, then you can finally pour the bubble gum juice on top… You can use blue gatorade and add some soda on top so the color blue wouldn’t be too over powering. :)

Bruschetta and cold cuts :)

Last night, I made my own dinner. I just bought a mini baguette from french baker and some tomatoes and basil leaves. It's very easy to do, yummy and so much fun!


Bruschetta

Ingredients:
French baguette
Tomatoes
Basil leaves
Garlic
Olive oil
salt
pepper

Preparations:
Slice the bread (desired size), toast it in the oven or skillet/grilling pan. While waiting for the bread, cut all the tomatoes and chopped coarsely into diced, chop all the basil leaves, and season with salt and pepper and add some olive oil. Once toasted peeled the garlic and gently rub it to the bread and then spoon mixture on top of it and serve.


Cold Cuts (my own recipe)


Ingredients
Pechay baguio (chinese cabbage)
Grilled chicken
Squid balls
Thousand Island dressing
Mayonnaise
salt and pepper

Preparations:
I have marinated the chicken into a mixture of olive oil, salt and pepper and then I grilled the chicken over the grilling pan and also the squid balls (cut thinly), while grilling, cut all the cabbage into thin slices. When the chicken is ready cut it into thin slices and mix it into the bowl together with the squid balls. 

The dressing:
About 5-6 tbsp of mayonnaise mix with 2-3tbsp of water mix and add pepper and salt to taste., then mix to the salad. Top with thousand island dressing.

its done!
