Eggs Benedict with Hollandaise Sauce

I've been hella busy.. mostly, lazy. HAHA so please excuse my lack of post. Anyways, I'll be sharing this easy french (?) sandwich recipe called Eggs Benedict. I love the Chelsea's eggs benedict until they have taken it out of the menu. sad!

So here, since I've been craving for Eggs Benedict, I have decided to create my own. :)

REMEMBER: This recipe is too fattening so make sure to only devoured atleast once a month or very rare.


You just basically need bacon, ham and poached egg,.
Grilled the bacon together with ham..

and then poach an egg.. since I really don't know how to poach an egg, I just did this trick. haha

and more importantly, you need a really good English Muffin. I got mine from the French Baker. 
I love French Baker, I think they have the yummiest breads ever! 

For the english muffin, I just put them on our purple oven toaster with pink lights. hehe

Recipe
ham
bacon
english muffin (split and toasted)
poached egg

Hollandaise Sauce (oh/lah~/dez)
3 egg yolks
about 7-10 tbsp of melted butter
1 pinch of salt
pepper (optional)
1tbsp of fresh lemon juice

The making of the sauce.
  1. Melt the butter in a small pan or in the microwave. Remove immediately.
  2. In a blender, blend the egg yolks, pepper, and salt until smooth. Add half of the hot butter slowly.
  3. Then Blend in the lemon juice and the remaining butter.
Place the English muffins on the serving plates. Top with 1 ham and about 2 slices of bacon and 1 poached egg. Then drizzle with the hollandaise sauce, and serve. :)

Some uses heavy cream to make it creamier and they also add cayenne pepper but I haven't tried it.. if you have please lemme know.

Bruschetta and cold cuts :)

Last night, I made my own dinner. I just bought a mini baguette from french baker and some tomatoes and basil leaves. It's very easy to do, yummy and so much fun!


Bruschetta

Ingredients:
French baguette
Tomatoes
Basil leaves
Garlic
Olive oil
salt
pepper

Preparations:
Slice the bread (desired size), toast it in the oven or skillet/grilling pan. While waiting for the bread, cut all the tomatoes and chopped coarsely into diced, chop all the basil leaves, and season with salt and pepper and add some olive oil. Once toasted peeled the garlic and gently rub it to the bread and then spoon mixture on top of it and serve.


Cold Cuts (my own recipe)


Ingredients
Pechay baguio (chinese cabbage)
Grilled chicken
Squid balls
Thousand Island dressing
Mayonnaise
salt and pepper

Preparations:
I have marinated the chicken into a mixture of olive oil, salt and pepper and then I grilled the chicken over the grilling pan and also the squid balls (cut thinly), while grilling, cut all the cabbage into thin slices. When the chicken is ready cut it into thin slices and mix it into the bowl together with the squid balls. 

The dressing:
About 5-6 tbsp of mayonnaise mix with 2-3tbsp of water mix and add pepper and salt to taste., then mix to the salad. Top with thousand island dressing.

Easy bread rolls with Olive oil. :)

 recipesI baked another bread out of my pandesal dough and I don't know what to name it. But anyways it's very easy to do and au so delis! :)



All you will need is a sausage, tomato, pizza sauce, garlic, onion and hard boiled eggs. and most especially, Olive oil. I looove olive oil and the aroma it brings on the food or salad.


I just first rubbed the cut garlic on dough, just to get the flavor. Like what they do in Bruschetta (which I will do next). Then I spread pizza sauce, put the sausage, tomato, sliced eggs, and some cut onions. Then I roll it and deep in Olive oil with pepper and put some Honey Mustard on top. :)

Then I coated some butter on my cupcake pan before putting the rolls.

and that's it! I love how it turned out. Its yummy and very easy to make.

Deli a la Pande!

I baked Pandesal (bread of salt) today for merienda and I am incredibly happy with the result. It was good actually. So yay for me! :) Here's the recipe for my yummy pandesal.


Ingredients:
1 tbsp of rapid rise yeast
1 raw egg
2 cups all purpose flour 
2 cups bread flour 
1/2 cup white sugar 
5 tbsp butter, melted 
1 tsp baking powder 
1 1/4 cup fresh milk, warm 
1 tsp salt 
1 cup bread crumbs 
1 tbsp cooking oil

Steps:
1. You need to Combine the yeast, sugar, and warm milk and stir until the yeast and sugar are fully dissolved. Leave it for 15-20mins until you see the bubbles.

2. In the mixing bowl, combine the dry ingrdients starting with the flour then the sugar, salt, and baking powder . Mix well by stirring.


Its important that the mixture of yeast and milk should look like this.

3. Add the egg, butter, cooking oil, and yeast-sugar-milk mixture in the mixing bowl with the dry ingredients then mix again until a dough is formed.

4. Use your clean hands to effectively mix the ingredients. In a flat surface, knead the dough until the texture becomes fine.

5. Mold the dough until shape becomes round then put back in the mixing bowl. Cover the mixing bowl with damp cloth and let the dough rise for at least 1 hour.
I left mine for 2hrs thats why it's this fluffy! :)

6. Put the dough back to the flat surface and divide into 4 equal parts using a dough slicer.

7. Roll each part until it forms a cylindrical shape Slice the cylindrical dough diagonally (These slices will be the individual pieces of the pandesal) Roll the sliced dough over the breadcrumbs and place in a baking tray with wax paper (makes sure to provide gaps between doughs as this will rise later on)

8. Leave the sliced dough with breadcrumbs in the tray for another 10 to 15 minutes to rise.

9. Pre heat the oven at 375 degrees fahrenheit for 10 minutes.

10. Put the tray with dough in the oven and bake for 15 minutes Turn off the oven and remove the freshly baked pandesal. Serve hot.

My tortilla Wraps.

So I did these wraps all by myself from scratch. This is actually one of my favorite. Its very easy to make and really yummy. Well for me, cause I'm obsessed with just about anything that includes pita wraps. From indian to greek cuisine. I love every bit of it!

Here's the recipe:
2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1 1/2 tbsp of lard or vegetable. Shortening
1/2 cup of warm water


Steps:
Mix all the dry ingredients. Flour, salt, baking powder. And then add the shortening, make sure to cut it in small pieces. Mix everything.

Then add the warm water and knead dough for 3mins and form it into a ball. Let it rest for another 5mins and cover with cloth or plastic. After 5 mins, form it into 10 small balls and let it rest again for 30 mins to relax.

After that roll each ball using a rolling pin into a flat round disc and toss it into a dry round skillet until it has brown spots or as soon as the bubbles appear. Then its ready!


Here I made some meaty wraps. Ham and beef patties with tomato sauce, honey mustard, cheese and fresh tomatoes.

Mean while, my sister baked some Jamaican Patties and this thing. I swear she's the best! I kinda wanna learn too coz I love jamaican patties but whatever, I'll just leave it to her. Atleast, I can bake delicious cakes! ;p
